Oh well, so here we go again. I really had to laugh when I read you babysat the dough and took it with you. How did the other parents react when you took it out to knead it? I also find it challenging to organize the day around the bread or to fit the bread into our daily schedule. You got nice results, though. I thought the crumb of my poolish baguettes was pretty tight, too. I didn't like it very much. The French bread was much better. And your bread looks delicious!<br /><br />On a side note, I've been known to mix up my poolish late at night before going to bed and just letting it sit on the counter overnight.
